While salsa is more commonly served with chips, I am a huge fan of mini rice cakes topped with this salsa. Rice cakes come in several flavors that pair so well with this salsa, including buffalo chicken and buttermilk ranch.

Somewhat Healthy Jalapeño PoppersWe are huge jalapeño pepper fans in our house, using them for creative libations, appetizers and even in our healthy meatloaf recipe. Everything is tasty with a little pepper flavoring! 
In the summer, we make a lot of jalapeño poppers as we grow a ton of them in our garden. Jalapeños are super easy to grow and the plants bloom and produce very quickly. Of course, we still anxiously await the mid-summer harvest!

Buffalo Chicken Pizza (on cauliflower crust)Before you mutter, "Ewwww!" let me assure you that my incredibly picky-eater husband loves this dish! We both agree that there is no cauliflower taste but, the health benefits are certainly worth taking the short amount of time to make this crust.
