RECIPE: Tastefully Tuesday - Avocado Quinoa Salad


Looking for something to have with a fabulously marinated steak for dinner tonight, I decided upon this delicious and healthy Avocado Quinoa Salad. It's simple, nutritious and, the best part,  you can whip it up in no time!

 

INGREDIENTS:

  • 1 cup quinoa, cooked
  • 2 - 3 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • Salt and pepper to taste (as with most recipes, I use smoked pepper - it definitely adds a great dimension to the flavor).

 


INSTRUCTIONS:

  • Cook the Quinoa: Follow package instructions to cook 1 cup of quinoa. Let it cool.
  • Prep the Veggies: Dice the avocados, halve the cherry tomatoes, dice the cucumber and finely chop the red onion and cilantro.
  • Assemble: In a large bowl, combine the cooked quinoa, diced avocados, cherry tomatoes, cucumber, red onion, and cilantro.
  • Dress It Up: In a small bowl, mix together the lemon juice, olive oil, salt, and pepper. Pour this over the salad and toss everything together.
  • Serve and Enjoy: Serve immediately, or let it chill in the fridge for 30 minutes for flavors to meld together. I prefer the latter.

 

This salad makes for a great lunch, dinner or even a side dish! 🥗🥑 Hope you enjoy this dish as much as I do! Let me know how it turns out!

LOL it took Ray a bit of adjusting to it, Bob "RealMan" Timm! I have it as a 'side salad' with chicken and he will sample a little. Now he enjoys it!

It's so easy and even with the 'cooling off' period, before combining the other ingredients, I much prefer it to be served cold, Dorie Dillard Austin TX. When Ray was in Denver, I made a big batch and would grill salmon, mahi mahi or chicken and add it to the salad for a different meal each night. It turned out to be a great 'one-person' main dish item - I just changed the protein.

Oh, Anna "Banana" Kruchten, it is the PERFECT lunch salad! Add a little protein and VOILA! you have a great lunch salad or dinner - or even a smaller serving as a side for dinner (which is what we did tonight)!

Hi Debe- I love anything with cilantro in it!!!  What I love about this salad is that it sounds very fresh and a good companion to a steak. I think I can get by with this if I don't tell Larry that it's quinoa! LOL

I was going to say that this seemed like something that would be right up Endre Barath, Jr. alley, but he said it before me, haha.  My diet used to consist of a lot of salads, now it consists of meat and vegetables, haha.  Maybe one day before I die, I will get it figured out.

That does look tasty - although I have to say I've tried quinoa several times in various recipes and I always ruled it as boring but it was probably whatever went with it. I'll have to try it again!

Kat Palmiotti oh, we are definitely birds of a feather! I don't know if you've ever had grits but, in the South, we joke that grits taste like whatever you add to them - seasoning or eggs, etc. Quinoa is much the same but, I do like the texture that chilled quinoa adds to a cold salad...and that smoked pepper just makes it taste a wee bit better! ;-)
